El mate es una infusión preparada con yerba mate, un árbol nativo de la selva paranaense. Según datos del Instituto Nacional de la Yerba Mate (INYM), en la Argentina se consume un promedio 6,4 kg por habitante por año y la yerba mate está presente en más del 90% de los hogares. Es la “infusión nacional” de Argentina, pero también forma parte de la cultura de Paraguay, Uruguay y sur de Brasil.
Los primeros en usar la yerba mate fueron los guaraníes, que habitaban el área que actualmente es Paraguay, Uruguay sur de Brasil y nordeste de Argentina. Para el pueblo guaraní, el árbol de la yerba mate es un regalo de los dioses. Ellos utilizaron las hojas del árbol como bebida, objeto de culto y moneda de cambio con otros pueblos.
El mate se suele compartir con varias personas y es un símbolo de amistad. En una “ronda de mate”, hay siempre un “cebador”, la persona que sirve el mate.
La yerba mate Argentina se produce y cultiva en Misiones y noreste de Corrientes. La Argentina es el principal productor y exportador mundial de yerba mate.
